Aufgrund der Aktivitäten des ruminalen Mikrobioms im Wirt (Milchkuh) enthält Milchfett viele verschiedene und teilweise sehr spezifische Fettsäuren (FS). Hierzu zählen beispielsweise ungeradzahlige und verzweigtkettige FS (OBCFA).
Die hohe Vielfalt und Spezifität der FS in der Milch von Wiederkäuern könnten (zukünftig) als Biomarker für die Erfassung der praktizierten Fütterung (Beispiel: Frischgrasanteil in der Ration), für die Bewertung der ruminalen Gesundheit oder für die Quantifizierung der Aufnahme von Milch und -produkten seitens der Verbraucher und damit in der Humanernährung verwendet werden.
Wir stehen jedoch erst am Anfang die Fülle von Informationen zu erfassen, die die FS-Zusammensetzung der Milch sowohl über die Kuh selbst, deren Fütterung und Gesundheit als auch über die erzeugte Milchqualität bereithält.

Part 2: Influence of the ruminal microbiome on the milk fatty acid composition

Due to the activities of the ruminal microbiome in the host (milk cow), milk fat contains many different and sometimes very specific fatty acids (FA). These include, for example, odd and branched chain fatty acids (OBCFA).
The high diversity and specificity of FA in ruminant milk could (in the future) serve as a biomarker for the recording of the practiced feeding (example: fresh grass portion in the ration), for the assessment of the ruminal health of the lactating ruminants or for the quantification of the consumption of milk and milk products by consumers and thus in human nutrition.
However, we are only just beginning to to understand the wealth of information that the FS composition of the milk holds both about the cow itself, its feeding and health as well as about the milk quality produced.
